Everyone will gather around the simmering pot of broth, poaching their food with a small ladle. The various types of Chinese hot pot<\/h2>\n\n\n\n<p>Each restaurant and family make it a little different than the other but can be broadly grouped into a few categories.&nbsp;<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>The Cantonese hotpot<\/strong> is a clean broth with plenty of fresh seafood, meat, and vegetables.\u00a0 It emphasizes significantly on the flavor of the broth.\u00a0<\/li><li><strong>The Szechuan style hot pot<\/strong> is prepared with a chock-full of mouth-numbing Sichuan peppercorns, red chilies, and many spices.<\/li><li><strong>The Mongolian hot pot<\/strong> from northern China has lamb as the standard choice, cooked in a clear chicken or lamb broth.\u00a0<\/li><\/ul>\n\n\n\n<p>The advent of <strong>packaged hot pot soup basis<\/strong> has made it convenient for us to savor different types of hot pot, but it is never the same as to make it from scratch as you have total control of the flavor and the level of spiciness.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"2\">2. A good stock is the most crucial element of the hot pot soup base<\/h2>\n\n\n\n<p>The foundation of the Chinese hot pot soup base is a good stock.\u00a0 My go-to ingredient is a mixture of chicken and pork bones.\u00a0<\/p>\n\n\n\n<p>I will explain how to prepare the two most common hot pot soup bases. The first one is the most popular, i.e., the Szechuan style spicy hot pot broth. The second one is the utterly non-spicy version I grew up with, the Cantonese herbal soup base.<\/p>\n\n\n\n<p><strong>Note<\/strong>: You can use the <strong>store-bought chicken stock<\/strong> as the alternative, but the flavor is not as good as making it from scratch, especially of the Cantonese herbal broth version that the broth\u2019s taste is the highlight of the hot pot.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"3\">3. How to prepare the stock from scratch<\/h2>\n\n\n\n<p>Here is my recipe to prepare the soup stock from scratch. I am using half chicken and half pork bones to get the best of both.&nbsp;<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Clean the chicken and pork bones under running water several times. This step removes as much blood and debris on the bone, effectively reducing the amount of scum while boiling the stock.\u00a0<\/li><li>Place the bones in a pot of cold water and bring it to a boil. The amount of water should be just enough to submerge all the bones.<\/li><li>After two to three minutes, discard the dirty water,\u00a0 and wash the bones.\u00a0<\/li><li>Place the pork bones in a fresh pot of cold water. Bring it to a boil.\u00a0<\/li><li>Cut two stalks of scallion and a few slices of ginger. Cook with the pork bones at barely simmering temperature for two hours. The scallions and ginger will remove the raw smell of the bones.\u00a0<\/li><li>Remove any scum floating by using a small wire mesh strainer.\u00a0<\/li><li>After two hours, add the chicken bones and simmer for another one hour. It takes a shorter time to extract the chicken bones\u2019 flavor because they are thinner than pork bones.\u00a0<\/li><li>Remove the bones. Pour the stock through a wire mesh strainer to remove any small bones and debris.\u00a0<\/li><\/ul>\n\n\n\n<p>The stock is now ready for the two hot pot soup bases in the recipe.&nbsp;<\/p>\n\n\n\n<p><strong>Note<\/strong>: I will season the soup base later, and therefore do not add any salt to the stock.\u00a0<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Is it worth it to make the stock at home?<\/h3>\n\n\n\n<p>The answer lies in how much effort you are willing to put in to make the hot pot.&nbsp;<\/p>\n\n\n\n<p>I make a large amount of stock (more than in the video for demo) when free and portion it to 500 ml each with the freezer-safe container. It can be stored nearly indefinitely, but it seldom lasts me for more than a month. I use it almost for every dish apart from the hot pot soup base. My <strong><a href=\"https:\/\/tasteasianfood.com\/mystaging\/chicken-corn-soup-recipe\/\" target=\"_blank\" rel=\"noreferrer noopener\">cream corn soup<\/a><\/strong>, <strong><a href=\"https:\/\/tasteasianfood.com\/mystaging\/winter-melon-soup\/\" target=\"_blank\" rel=\"noreferrer noopener\">winter melon soup<\/a><\/strong>, and <strong><a href=\"https:\/\/tasteasianfood.com\/mystaging\/hot-and-sour-soup\/\" target=\"_blank\" rel=\"noreferrer noopener\">hot and sour soup<\/a><\/strong> are all based on this chicken and pork stock.\u00a0<\/p>\n\n\n\n<p>Indeed, you need to weigh between the time spent and the reward. The Szechuan mala hotpot<\/h2>\n\n\n\n<p>The bright red chili oil floating on top, plus the noticeable red chili, will make anyone feel the heat even not tasting it. The Szechuan peppercorns impart a burst of tongue-numbing feeling called <em>mala <\/em>\u9ebb\u8fa3<em>,<\/em> which will surely be the most unforgettable experience for the first-timer.&nbsp;<\/p>\n\n\n\n<p>Although every restaurant has a secret recipe, and each household insists they have the best recipe, there are a few shared characteristics in all the countless variations.&nbsp;<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>They are fiercely hot, prepared with loads of chilies.&nbsp;<\/li><li>Szechuan peppercorn is a must, which is the spice that causes the tongue-tingling effect.&nbsp;<\/li><li>The broth is quite oily, which is common in Szechuan food.&nbsp;<\/li><\/ul>\n\n\n\n<p>Growing up eating mildly flavored and less oily Cantonese food, I have reduced the spiciness and the amount of oil but retain all other spices to get the authentic flavor.&nbsp;<\/p>\n\n\n\n<p>Here is my version of the Chinese hot pot recipe, Szechuan style.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Preparation&nbsp;<\/h3>\n\n\n\n<ul class=\"wp-block-list\"><li>Cut the <strong><a href=\"https:\/\/amzn.to\/38nM9OS\" target=\"_blank\" rel=\"noreferrer noopener\">dry chilie<\/a><\/strong>s into 1-inch sections. You have the option to keep or discard the seeds, depending on the level of heat that you prefer.\u00a0<\/li><li>Soak the dry chilies with hot water for 30 minutes to soften them so that it is easier to grind them either with a mortar and pestle or an electric blender. Keep the chili paste aside.\u00a0<\/li><li>Prepare the spice blend by coarsely ground the spices with the grinder. The spices are <strong><a href=\"https:\/\/amzn.to\/2KskdiU\" target=\"_blank\" rel=\"noreferrer noopener\">star anise<\/a><\/strong>, <strong><a href=\"https:\/\/amzn.to\/2UXkyMp\" target=\"_blank\" rel=\"noreferrer noopener\">cinnamon bark,<\/a><\/strong> tsao-ko, white cardamom, <a href=\"https:\/\/amzn.to\/3pUNeUH\" target=\"_blank\" rel=\"noreferrer noopener\"><strong>bay leaves<\/strong>,<\/a> <strong><a href=\"https:\/\/amzn.to\/3eJRFN2\" target=\"_blank\" rel=\"noreferrer noopener\">cumin seeds<\/a><\/strong>, <strong><a href=\"https:\/\/amzn.to\/38r1cWe\" target=\"_blank\" rel=\"noreferrer noopener\">cloves<\/a><\/strong>, and green Szechuan peppercorns. Tsao-ko and white cardamom are not readily available outside Asia, so you can omit them if unavailable.\u00a0 <\/li><li>Prepare the aromatic &#8211; ginger slices, coarsely chopped garlic, two stalks of scallion, and coriander leaves (cut into sections).\u00a0<\/li><\/ul>\n\n\n\n<p><strong>Note<\/strong>: Different types of chilies are used in Szechuan, but I simplify it with only dry chili.\u00a0<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Cooking&nbsp;<\/h3>\n\n\n\n<ul class=\"wp-block-list\"><li>Heat the oil in a wok. Add the aromatics and fry over medium heat until they start to turn brown. This step is to let the flavor of the aromatics infuse into the oil. Once the ginger turns slightly brown, remove all the aromatic and leave the oil in the wok.\u00a0<\/li><li>Add the chili paste into the oil over medium heat to stir fry until the water has evaporated and become fragrant.\u00a0<\/li><li>Add the spices and the <strong><a href=\"https:\/\/amzn.to\/3tvgof1\" target=\"_blank\" rel=\"noreferrer noopener\">chili bean paste<\/a><\/strong>. Turn down the heat to low and stir fry for a minute until the spices release the flavor.<\/li><li>Add a handful of additional dried chili (cut into half) and stir-fry for another five minutes. (optional)<\/li><li>Add the <strong><a href=\"https:\/\/amzn.to\/2WjZL6v\" target=\"_blank\" rel=\"noreferrer noopener\">rock sugar<\/a><\/strong> and some rice wine to balance the flavor.<\/li><li>Pour the homemade stock into the pot and mix well, then season with salt.\u00a0<\/li><li>Bring it to a boil, and it&#8217;s done.\u00a0<\/li><\/ul>\n\n\n\n<p><strong>Note<\/strong>: The authentic Szechuan recipe uses <strong>beef tallow<\/strong>, but I substitute it with vegetable oil for a healthier version. I also reduce the amount of oil by half since most non-Sichuanese like me will find it too oily.\u00a0<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Special note on some less common ingredients&nbsp;<\/h3>\n\n\n\n<p>Here are some specific spices in the recipe. The first two are optional, but Szechuan peppercorn is a must.&nbsp;<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">\u8349\u679c\uff08Lanxangia tsaoko, formerly Amomum tsao-ko\uff09<\/h4>\n\n\n\n<p><strong><a href=\"https:\/\/amzn.to\/3tt33DN\" target=\"_blank\" rel=\"noreferrer noopener\">Tsaoko <\/a><\/strong>is also called black cardamom. It is widely used in braising liquid recipes. You need to remove the seeds inside while using a larger quantity to reduce the bitterness. It is also not widely available outside China. I live in Malaysia with a large Chinese community and can get both &#8216;cardamoms&#8217; at a Chinese grocery store near me. Some Chinese medical stores also keep these spices as it is used in traditional medicine. Some of them also include fennel seeds. The Cantonese style herbal soup base (non-spicy)&nbsp;<\/h2>\n\n\n\n<p>The second type of Chinese hot pot soup base is the age-old recipe of my family. This soup base is the modified version of the Cantonese herbal soup.&nbsp;<\/p>\n\n\n\n<p>I use the chicken and pork bones stock as the base and add the following Chinese herbs to simmer for an hour. (The goji berries are added much later as it takes a shorter time to release the flavor.) Season with salt, and it is ready.&nbsp;<\/p>\n\n\n\n<p>All the herbs I used are readily available in the Chinese medical shop as they are commonly used in Chinese soups.&nbsp;<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Here is a brief description of the herbs:<\/h4>\n\n\n\n<p><strong>Dong Gui<\/strong> (Chinese Angelica, \u5f53\u5f52) is sweet and slightly bitter. It has an unmistakably distinctive aroma, which can smell from far while boiling in the soup.&nbsp;<\/p>\n\n\n\n<p><strong>Yu zhu<\/strong> (Fragrant Solomonseal Rhizome \/\u7389\u7af9) has a pleasant and sweet taste. The essential hot pot equipment<\/h2>\n\n\n\n<p>Here is the essential equipment you need to serve the Chinese hot pot.&nbsp;<\/p>\n\n\n\n<p><strong>A portable stove<\/strong>. The Szechuan spicy and the Cantonese herbal soup base in this post are a great combination. Another popular spicy soup base is Tom Yam soup. As for the non-spicy one, tomato base and miso soup are also my favorite.\u00a0<\/li><li>Any food should be small, preferably bite-size, which can be cooked within a short time because everyone shares the same pot.\u00a0<\/li><li>It is best to have a balance of meat, seafood, vegetables, and noodles, although the menu is deeply personalized.<\/li><li>Since the list of food items is quite extensive (the idea is to have many varieties), it is almost impossible to make everything from scratch. I usually buy some items and make some myself.\u00a0Variety is critical for the food platter, with a little bit of everything for the diner to choose.\u00a0<\/li><\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Start with some vegetables&nbsp;<\/h3>\n\n\n\n<p><strong>Napa cabbage<\/strong> is the first item I add to the soup base to give it some vegetable flavor. It also takes time to cook and wouldn&#8217;t be too soft after prolonged simmering.<\/p>\n\n\n\n<p>Other favorite vegetables are <strong>carrot, sweetcorn, and daikon (radish).<\/strong> They all add flavors and can withstand prolonged boiling.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Follow by the main items&nbsp;<\/h3>\n\n\n\n<p>Now we can slowly add the meat and seafood. I would suggest buying <strong>thinly sliced meat <\/strong>(beef, lamb) from the store\u2019s frozen section because they are sliced with a machine down to paper-thin. This thinly sliced meat is ready to eat within a minute in the simmering broth. It is unnecessary to marinate the meat (although there is no harm) since it is served with a flavored soup base.&nbsp;<\/p>\n\n\n\n<p>I also suggest removing the meat before adding other seafood if the pot is small. Try to add the food items of<strong> the same size<\/strong> so that they will be cook simultaneously.\u00a0<\/p>\n\n\n\n<p>Some of the popular items are freshly sliced <strong>fish fillet, shrimp, cuttlefish, fish balls, fish cakes, and stuffed bitter gourd.&nbsp;<\/strong><\/p>\n\n\n\n<p>Mushrooms are the regular items on the hot pot menu. The popular types of mushrooms are <strong>Chinese dried mushrooms (must be presoaked), enoki, shiitake, button, and straw mushrooms.\u00a0<\/strong><\/p>\n\n\n\n<p>Other items include various types of <strong>wontons and dumplings<\/strong>, <strong>firm tofu, and deep-fried bean curd skin \u8150\u7af9<\/strong>.\u00a0<\/p>\n\n\n\n<p>Although offal remains the classic hot pot ingredients, I leave it out as I don&#8217;t quite like it.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Finish with more vegetables and noodles&nbsp;<\/h3>\n\n\n\n<p>As time goes by, the amount of broth will gradually be reduced and the flavor is getting more intense.
