The soup base is unique, prepared with a humongous amount of prawn heads and shells coupled with pork bones concentrated into a thick, creamy, and highly aromatic broth.\u00a0<\/p>\n\n\n\n<p>Prawn mee is well-known in Penang, where you will find street vendors selling this delicacy with a long queue of customers. Many are family businesses of a few generations, cooking their prawn mee \/ Hokkien mee with the well-guarded secret recipe.\u00a0<\/p>\n\n\n\n<p>This article is about how to prepare prawn mee at home. So if you are yearning for a bowl of prawn mee, are a Malaysian living abroad, or like to cook some unique noodles, you are at the right place.\u00a0<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Other names for prawn mee<\/h2>\n\n\n\n<p class=\"has-background\" style=\"background-color:#ebebeb\">Prawn mee is called \u867e\u9762 in Chinese. Prepare the prawn noodle soup<\/h2>\n\n\n\n<p>Below is my detailed explanation of how to make Penang-style prawn me.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">a. Prawn heads and shells<\/h3>\n\n\n\n<p>Getting enough heads and shells is the first hurdle to making this Hokkien mee at home. I am fortunate to live in Malaysia, where these items are in demand and sold in the wet market. Therefore, I suggest you reserve the heads and shells each time you purchase prawns, and once you gather a sizable amount, it&#8217;s time to hold your prawn mee feast.\u00a0<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Here are the steps:<\/h4>\n\n\n\n<ul class=\"wp-block-list\"><li>Clean the prawn heads and shells with water thoroughly. Sometimes it is pretty dirty, so please clean them thoroughly.\u00a0<\/li><li>You may want to wear a thick glove or clean them gently with your hands as they are pretty sharp.\u00a0<\/li><li>Place them in a colander to drain for half an hour or until there is no more water dripping from the prawn shells. You should ensure they are reasonably dry since we will fry them in the following step.\u00a0<\/li><li>Heat some vegetable oil in a large pan or wok.\u00a0<\/li><li>Pour the heads and shells into the wok and stir fry over medium heat.\u00a0<\/li><li>The duration of stir-frying depends on how dry the heads and shells are. Generally, it takes about ten minutes before the water dries out.\u00a0<\/li><li>Meanwhile, you can add a few dried chiles to the pan if you prefer a spicy broth, which is optional.\u00a0<\/li><li>Once the water has evaporated, the color of the shells will change to a beautiful pink color. Pork bone&nbsp;<\/h3>\n\n\n\n<p>The broth always includes bones, although the name of the noodles is prawn mee.&nbsp;Sometimes I feel that Penang Hokkien mee is a better name to avoid confusion \ud83d\ude42<\/p>\n\n\n\n<p>The most common bone is pork, but <strong>chicken bone can be used for a pork-free version.\u00a0<\/strong>Some may also include pork ribs, but the cost is high for commercial purposes.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Here are the steps:<\/h4>\n\n\n\n<ul class=\"wp-block-list\"><li>Place the bone in a <strong><a href=\"https:\/\/amzn.to\/38Xtjxr\" target=\"_blank\" rel=\"noreferrer noopener\">stockpot<\/a><\/strong>. Add sufficient water to submerge the bone entirely.<\/li><li>Bring it to a boil. Skim off the scum floating on the surface from time to time.<\/li><li>Reduce the heat to just enough to maintain a slow simmer. Simmer the bone for two to three hours.<\/li><li>Place the pork loin in the broth and let it simmer until fully cooked at any time while simmering the bone. Pork loin is one of the two essential ingredients besides the prawn.\u00a0 The time required depends on the pork loin\u2019s thickness, which takes about half an hour to cook thoroughly.\u00a0 You can use a kitchen thermometer to check the doneness. The pork is thoroughly cooked when the internal temperature reaches 160 \u00baF\/70\u00b0C.<\/li><li>Remove the pork from the broth once it is fully cooked, as prolonged cooking will toughen the meat. You can replace the pork loin with chicken breast if you prepare a pork-free prawn mee.<\/li><li>Add some rocking sugar to the broth and continue to simmer. You may use regular white sugar should rock sugar is unavailable.<\/li><li>After removing the meat, continue to simmer the bone for three hours or until the flavor is released fully. Remove the bone.\u00a0 (Note: If you use chicken bones, simmer for 1.5 hours should d be sufficient to extract the flavor.)<\/li><\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">c. Crush the prawn heads&nbsp;<\/h3>\n\n\n\n<ul class=\"wp-block-list\"><li>Since the shrimp oil might be trapped inside the shrimp heads, I crush the shrimp heads with mortar and pestle to ensure all the flavor is extracted while boiling.<\/li><li>You can use an electric food blender to crush the heads, but suggest not to crush them too fine until they can escape through the strainer when we filter the broth later. The perfect broth is quite thick, but I do not want to overdo it until it becomes too murky.<\/li><li>Now return the crushed head to the broth and continue to simmer. You may need to add more water should the broth have reduced too much. Once you add the shrimp heads, the broth will immediately turn red due to the prawn oil.<\/li><li>Bring it back to a boil, then simmer for an hour over low heat. This duration should be enough to extract the flavor as these are crushed shrimp heads.<\/li><li>Season with salt and sugar before removing it from heat.<\/li><\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">d. Strain the broth<\/h3>\n\n\n\n<ul class=\"wp-block-list\"><li>Place the shrimp shells on a wire mesh strainer and press with a spatula to extract as much broth as possible. Then, discard the bones and shells.<\/li><li>Pour the broth through a wire mesh strainer to get a clean broth.<\/li><\/ul>\n\n\n\n<p>The broth is now ready. It has an unbelievable flavor and is concentrated. It is intended to be that way, as we will add the noodles into the broth to serve.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large\"><img decoding=\"async\" width=\"500\" height=\"750\" src=\"https:\/\/tasteasianfood.com\/mystaging\/wp-content\/uploads\/2021\/03\/prawn-mee-recipe-2.jpg\" alt=\"Prawn mee is a specialty noodle soup popular among the Malaysian Chinese. Cook the ingredients&nbsp;<\/h2>\n\n\n\n<p>There are a few ingredients you need to make prawn mee besides the prawn. Here are the details and what you need to do with them.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">a. Rice vermicelli and yellow egg noodles<\/h3>\n\n\n\n<p>Yellow egg noodles are wet yellow noodles made with alkaline salt (Kansui), making the noodles feel slippery in the mouth. It may not be available widely, so head towards the Asian grocery store if you live outside Asia.<\/p>\n\n\n\n<p>I am sure you do not like the slightly alkaline taste, although kansui is edible and used to make other delicacies such as zongzi and mooncake pastry. Remove the noodles from the packet, rinse it thoroughly with plenty of water, and drain.\u00a0\u00a0<\/p>\n\n\n\n<p><strong><a href=\"https:\/\/amzn.to\/3101UXg\" target=\"_blank\" rel=\"noreferrer noopener\">Rice vermicelli<\/a><\/strong> is called bihoon \u7c73\u7c89 in Malaysia. Soak it in water until it is fully hydrated and soft, which takes twenty minutes to half an hour. You can speed up the hydration by soaking the rice vermicelli (rice noodles) in hot water.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">b. Bean sprouts<\/h3>\n\n\n\n<p>Bean sprouts add crunchiness to the soup noodles.&nbsp;<\/p>\n\n\n\n<p>Place the bean sprouts in a large container, then fill with water until the bean sprouts are floating.<\/p>\n\n\n\n<p>Stir the bean sprouts with your hand. The bean shell (which is grey\/black) color will detach from the sprouts. Discard the bean shells.<\/p>\n\n\n\n<p>Wash the bean sprouts thoroughly and drain.<\/p>\n\n\n\n<p>Some bean sprouts come with roots, which you should remove before cooking.<\/p>\n\n\n\n<p>Beansprouts can be kept in the refrigerator for up to two weeks.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">c. Kangkung (Water spinach)<\/h3>\n\n\n\n<p>Remove the root and part of the stem that is hard. You may also use only the leaves, but I like to include the small stems close to the leaves for their crunchiness.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">d. Pork loin or breast meat<\/h3>\n\n\n\n<p>The pork loin is cooked in the broth during simmering and fished out when it is done.\u00a0 Cut it into thin slices before serving. Some switch-up version of prawn mee uses Chinese roast pork.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">e. Fish cakes<\/h3>\n\n\n\n<p>I used the store-bought fish cake, which has been pre-fried. You can keep it in the freezer for a few months if you do not use it. I leave it on the table until it returns to room temperature and lightly fries it with some oil before cutting them into slices.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">f. Hard-boiled eggs<\/h3>\n\n\n\n<p>Prawn mee is not complete without hard-boiled eggs. It sounds easy to make hard-boiled eggs, but very often, many hard-boiled eggs served at restaurants are tinged with a layer of grayish coating on the egg yolk.\u00a0 The color is unsightly, although it does not cause any harm to our health.<\/p>\n\n\n\n<p>There is an article on this blog that explains <strong><a href=\"https:\/\/tasteasianfood.com\/mystaging\/hard-boiled-eggs\/\" target=\"_blank\" rel=\"noreferrer noopener\">how to prepare the perfect hard-boiled egg<\/a><\/strong> without any greyish layer. The egg white is firm but not rubbery.\u00a0 Preparing the hard-boiled eggs in advance is better as they can be kept in the refrigerator overnight.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">g. Sambal (Malaysian chili paste)<\/h3>\n\n\n\n<p>Sambal is essential for prawn mee. The sambal suitable to serve with prawn noodles is sambal tumis.\u00a0 This blog has a recipe explaining <strong><a href=\"https:\/\/tasteasianfood.com\/mystaging\/sambal-belacan-recipe\/\" target=\"_blank\" rel=\"noreferrer noopener\">how to prepare the sambal tumis<\/a><\/strong> with belacan and dried shrimps, which is ideal for prawn mee.<\/p>\n\n\n\n<p>Alternatively, you can use the store-bought <strong><a href=\"https:\/\/amzn.to\/3bWOmSJ\" target=\"_blank\" rel=\"noreferrer noopener\">sambal tumis<\/a><\/strong> to save time. You can get it at your favorite Asian market.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">h. Prawn<\/h3>\n\n\n\n<p>Place the prawn in the broth to cook until they turn color. Remove and place them on the noodles before serving.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">i. Fried shallots and chopped scallion (spring onions)<\/h3>\n\n\n\n<p><strong>Fried shallots<\/strong> and chopped scallion are sprinkled on the noodles right before serving. Other ingredients<\/h3>\n\n\n\n<p>Some Hokkien mee stores have their interpretation by adding char siu, tofu puff, and pork belly slices. These are the optional items you may consider.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">4. Assemble and serve&nbsp;Penang Hokkien mee<\/h2>\n\n\n\n<p>Prawn mee is always served hot; therefore, only ladle the boiling broth onto the noodles when required.<\/p>\n\n\n\n<p>Here are the steps:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Bring a large pot of water to a boil.\u00a0<\/li><li>Place the kangkung, beansprouts, yellow egg noodles, and rice vermicelli in a <strong><a href=\"https:\/\/amzn.to\/38VmxZk\" target=\"_blank\" rel=\"noreferrer noopener\">colander\/strainer basket<\/a><\/strong>.\u00a0 I have one which is relatively deep and ideal for this purpose.<\/li><li>Place the strainer with all the ingredients to blanch for about one and a half minutes. Drain and pour the vegetables and noodles into the serving bowls.<\/li><li>Arrange the cooked prawn, pork slices, fish cake slices, and half of the hard-boiled egg on top of the noodles.<\/li><li>Ladle the boiling prawn broth into the bowl.<\/li><li>Sprinkle the fried shallots and scallions on top to garnish.<\/li><li>Place the sambal in a soup spoon and serve with the prawn mee.
