Although there are some variations of the dish from different regions, typically, it consists of noodles served in a savory gravy seasoned with spices and thickened with sweet potato gravy.<\/p>\n\n\n\n<p>In this article, I\u2019ll share my version of Mee Rebus. My gravy includes dried shrimp and fermented bean paste (taucu) in addition to sweet potatoes, reflecting my unique style with a strong Chinese culinary influence.<\/p>\n\n\n\n<p><em>Note: This post may contain affiliate links. What is mee rebus?<\/h2>\n\n\n\n<p>Mee Rebus is a popular noodle dish from Southeast Asia, particularly Indonesia, Malaysia, and Singapore. This flavorful Malay street food is served with yellow egg noodles and a savory gravy thickened naturally with sweet potatoes. The noodles are topped with crispy bean sprouts, savory tofu, and hard-boiled eggs. The flavorful gravy is made with local spices, stocks, and boiled sweet potatoes. Besides, adding crispy fried shallots and flavorful dried shrimp enhances the dish&#8217;s savory flavors. It is also closely related to Mee Jawa from Indonesia.<\/p>\n\n\n\n<h2 class=\"wp-block-heading has-vivid-red-color has-text-color has-link-color wp-elements-f27864f87bd5e1a6fae8bdb97e214dc5\">B. How to prepare Mee Rebus?<\/h2>\n\n\n\n<p>Here is a detailed explanation of each step.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">1. Prepare the stock<\/h4>\n\n\n\n<p>Mee rebus is traditionally made with beef stock. To make the stock, beef bones are simmered in boiling water, then removed and filtered before being used as the soup base. The meat from the bones is used as part of the topping for the dish.&nbsp;<\/p>\n\n\n\n<p>In my recipe, I use<a href=\"https:\/\/amzn.to\/3jfVYjV\" target=\"_blank\" rel=\"noreferrer noopener\"> chicken stock <\/a>instead of <a href=\"https:\/\/amzn.to\/46phc7z\" target=\"_blank\" rel=\"noreferrer noopener\">beef stock<\/a>. I had some chicken stock stored in the freezer from the previous week. As a result, my version of mee rebus may differ slightly from the one you would normally find from the street vendors. Alternatively, consider using store-bought beef broth or chicken stock to simplify making mee rebus.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">2. Steam and mash the sweet potatoes<\/h4>\n\n\n\n<p>I use sweet potatoes with yellow flesh for this purpose.&nbsp;<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>First, peel the sweet potatoes and cut them into 1\u20132 inch pieces.<\/li>\n\n\n\n<li>Then, place them in a <a href=\"https:\/\/amzn.to\/3ffrK1W\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">steamer <\/a>to steam for about 20 minutes or until tender.<\/li>\n\n\n\n<li>To check if the sweet potatoes are soft enough. Simply use a <a href=\"https:\/\/amzn.to\/3ihikUH\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">chopstick <\/a>to poke into the sweet potato pieces. If the chopstick goes through easily, the sweet potato pieces are ready.<\/li>\n\n\n\n<li>Once they are ready, mash them just like you would make mashed potatoes. Blend the spices for making Mee Rebus gravy<\/h2>\n\n\n\n<p>The flavor of mee rebus largely depends on the spices used in the gravy. Different Malaysian states have their own unique spice blends, giving each version its distinct taste.<\/p>\n\n\n\n<p>In this recipe, I use the most common spices to create a balanced, universal flavor. You can adjust the spice mix by adding or omitting ingredients to suit your taste.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">List of spices used to make the Mee Rebus gravy:<\/h4>\n\n\n\n<ol class=\"wp-block-list\">\n<li><strong>Chilies. <\/strong>When preparing Malay cuisine, red chilies are a key ingredient. While the amount used depends on your preferred heat level, I recommend removing the seeds to reduce spiciness. This way, you can use more chilies for a deeper flavor without making the dish overly hot. Cut the chilies into small pieces to make blending easier. If you prefer a shortcut, you can use ready-made chili paste, commonly known in Malaysia as chili boh, as a substitute for fresh chilies.<\/li>\n\n\n\n<li><strong>Onion. <\/strong>It does not matter whether you use yellow or red onions. Cut the onion into small chunks for easy blending.<\/li>\n\n\n\n<li><strong>Garlic. <\/strong>Garlic is another essential ingredient that helps elevate the taste of Mee Rebus. You can either cut or bash the garlic before blending.<\/li>\n\n\n\n<li><strong>Candlenuts. <\/strong>Although candlenuts are optional, they are typically used to thicken the gravy. Another way is to use crushed groundnuts. I do not use them because the gravy is thick enough with sweet potatoes alone.<\/li>\n\n\n\n<li><strong>Lemongrass. <\/strong>Use only the center part of the <a href=\"https:\/\/amzn.to\/3CewRrq\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">lemongrass <\/a>stalks. This means discarding the green part and the part near the stem. Once the outer layer of the bulb is removed, slice the pale yellow bulb section into thin pieces for easy blending. (Please refer to the video in this post for the details.)<\/li>\n\n\n\n<li><strong>Turmeric. <\/strong>Fresh turmeric or freshly ground <a href=\"https:\/\/amzn.to\/359TJug\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">turmeric powder<\/a> helps give a bright yellow color to the gravy, besides enhancing the taste. Please wear gloves when handling turmeric, as it stains your skin easily.<\/li>\n\n\n\n<li><strong>Galangal.<\/strong> <a href=\"https:\/\/amzn.to\/3ChOZRb\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">Galangal <\/a>is a unique ingredient with a distinct flavor widely used in Malay cuisine. Although it resembles ginger, it is not a substitute for it. However, it is not a critical ingredient, and some styles of mee rebus do not include it in the recipe. Cut the galangal into small pieces or thin slices to ease blending.<\/li>\n\n\n\n<li><strong>Dried shrimp.<\/strong> <a href=\"https:\/\/amzn.to\/3n9j9PR\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">Dried shrimp<\/a> add depth and umami to the Mee Rebus gravy. Before blending, rinse them with water and soak them for fifteen minutes to soften them.<\/li>\n<\/ol>\n\n\n\n<p>To prepare the spice blend, add all the above ingredients into the electric blender or food processor to blend them into a smooth chili paste. Make the mee rebus gravy<\/h2>\n\n\n\n<p>Let&#8217;s prepare the Mee Rebus gravy with the blended spices and sweet potato paste.<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Heat some oil in a pan and add the spice mix. Cook until the liquid evaporates, which will take about ten minutes. After that, the spice will start to saute in the oil, and you will notice the aroma fills the air.&nbsp;<\/li>\n\n\n\n<li>Mix in the mashed sweet potatoes and stir well with the spice paste.&nbsp;<\/li>\n\n\n\n<li>Pour chicken or beef broth and season with curry powder,<a href=\"https:\/\/amzn.to\/2WJBUer\" target=\"_blank\" rel=\"noreferrer noopener\"> fermented soybean paste (taucu)<\/a>, palm sugar, and salt. (Use regular sugar if palm sugar is unavailable.)&nbsp;<\/li>\n\n\n\n<li>Add crushed ground peanuts or candlenuts to the spice mix and mix well to form a thick gravy. (optional)&nbsp;<\/li>\n\n\n\n<li>Taste to check if you need to add more salt or sugar.&nbsp;<\/li>\n<\/ol>\n\n\n\n<p>The Mee Rebus gravy is now ready.<\/p>\n\n\n\n<h2 class=\"wp-block-heading has-vivid-red-color has-text-color has-link-color wp-elements-7287cf182accb312e7112ebd02684711\">E. Prepare the toppings<\/h2>\n\n\n\n<p>Mee Rebus is served with a variety of toppings. Below is a list of the items that are usually used. You can use all or only part of those that you like.<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li><strong>Fried shallots. <\/strong><a href=\"https:\/\/amzn.to\/2NxxZmn\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">Fried shallots<\/a> are an essential ingredient easily made at home or purchased from Asian grocery stores. You can make it easily by following <a href=\"https:\/\/tasteasianfood.com\/mystaging\/fried-shallots\/\">my homemade fried crispy shallots recipe<\/a>.<\/li>\n\n\n\n<li><strong>Firm tofu. <\/strong>Slice the firm tofu (tau kwa) into thin pieces and deep-fry in hot oil over medium heat until both sides turn golden brown. It&#8217;s advisable to remove excess moisture from the tofu pieces before frying to prevent oil splatters. After deep frying, cut the tofu into cubes.<\/li>\n\n\n\n<li><strong>Hard-boiled egg. <\/strong>Hard-boiled egg is a common ingredient used in Mee Rebus. Please refer to <a href=\"https:\/\/tasteasianfood.com\/mystaging\/hard-boiled-eggs\/\">that article <\/a>for details.<\/li>\n\n\n\n<li><strong>Cucur udang. <\/strong>An optional ingredient is Cucur Udang, which is Malaysian-style prawn fritters. Street food vendors will use them while crispy and as a topping for the noodles. However, it is optional, and I didn&#8217;t make it today. If you are interested, please read my articles on <a href=\"https:\/\/tasteasianfood.com\/mystaging\/cucur-udang\/\">how to prepare these flavorful prawn fritters<\/a>.<\/li>\n\n\n\n<li><strong>Beef pieces. <\/strong>If you make beef broth from scratch, you can separate the meat attached to the bones as a topping for Mee Rebus.<\/li>\n\n\n\n<li><strong>Bean sprouts. <\/strong>To prepare the bean sprouts, wash them first and then blanch them in boiling water for 15 to 30 seconds. Bean sprouts can also be eaten raw, so a brief blanch helps retain their texture.<\/li>\n\n\n\n<li><strong>Yellow mee. <\/strong>To complete the recipe, you will need yellow mee. This type of yellow noodle is called Mee Kuning in Malaysia and Singapore. If you can\u2019t get the yellow mee where you live, you can use other noodles as a substitute, although it is less authentic.&nbsp; Unlike spaghetti, this type of noodle is pre-cooked, so it only needs a quick blanch in a large pot of boiling water for twenty seconds to remove the excess oil and keep it warm.<\/li>\n<\/ol>\n\n\n\n<h2 class=\"wp-block-heading has-vivid-red-color has-text-color has-link-color wp-elements-cea466cdcadd8d3c5c51187f949d510e\">F. To assemble the bowl of noodles<\/h2>\n\n\n\n<p>Now assemble all the ingredients in a noodle bowl to serve.<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Drain the noodles and bean sprouts from boiling water and put them into the bowl.\u00a0<\/li>\n\n\n\n<li>Then, pour a generous amount of the mee rebus gravy over the noodles.<\/li>\n\n\n\n<li>Add the toppings on top.&nbsp;<\/li>\n\n\n\n<li>Lastly, garnish with coriander leaves, sliced green chilies, and lime wedges. Add a squeeze of lime juice before serving.<\/li>\n<\/ol>\n\n\n\n<h2 class=\"wp-block-heading has-vivid-red-color has-text-color has-link-color wp-elements-b5a9c59aee90170aec6d0dd095666d47\">G.
