Chinese Steamed Egg with Pumpkin Puree and Minced Chicken (金瓜蓉雞肉碎蒸水蛋) has always been one of my favorite comfort foods. It is simple, with a delicate, silky texture, making it perfect as part of a family meal or enjoyable on its own with a bowl of steamed rice.

This recipe started as an experiment after I tried a similar dish at a restaurant. I loved the idea of pairing silky steamed egg with pumpkin puree, but I wanted to make it my own by adding a savory topping of minced chicken cooked with Dong Choy (冬菜), a type of preserved Chinese cabbage with a sharp, savory taste.

The result is a dish with three distinct layers. At the bottom is a delicate steamed egg custard, followed by a golden pumpkin puree, and topped with savory minced chicken flavored with Dong Choy. With every spoonful, you get the gentle flavor of egg, the natural sweetness of pumpkin, and the savory chicken topping, creating a comforting home-cooked dish that is both simple and satisfying.

  • Prepare the egg mixture – Start by cracking the eggs into a mixing bowl and lightly beating them in one direction until combined. The goal is to combine the eggs without creating too many bubbles, as bubbles can affect the smooth texture of the steamed custard. Add the water and salt, then stir until just combined. Strain the mixture through a fine sieve directly into the heatproof serving dish. Before steaming, remove any remaining bubbles on the surface by gently pricking them with the tip of a folded paper towel.
  • Prepare the pumpkin – Remove the seeds and peel the pumpkin, then slice it into thin, even pieces. 
  • Finely chop the garlic and Dong Choy – Finely chop the garlic and Dong Choy. Having everything prepared before turning on the stove makes the stir-frying step much quicker.
  • Prepare the chicken topping – Measure the minced chicken and keep it ready beside the stove. Having everything prepared beforehand makes the stir-frying step quick and smooth.

Step 1 – Steam the egg custard

Bring the water in your steamer to a rolling boil. Place the dish of egg mixture into the steamer, making sure it sits level so the custard sets evenly. 

Cover the dish with a larger inverted plate before closing the steamer lid. This prevents condensation from dripping onto the egg, which helps keep the egg surface smooth. 

Reduce the heat to low and steam gently until the egg is fully set but still has a slight jiggle in the center. The exact steaming time depends on the depth of the dish, the amount of egg mixture, and the heat of your stove, so start checking toward the end of the cooking time.

Briefly removing the lid to check the custard will not affect the final result. Once cooked, remove the steamed egg from the steamer and set it aside.

Step 2 – Make the pumpkin puree

Steam the pumpkin for 15 minutes. Once it is soft enough to mash easily with a fork or spoon, allow it to cool slightly before blending it with a little water in a food processor or blender until it becomes a creamy, pourable puree. 

Add water gradually and blend until the puree is smooth and easy to spread. The puree should be thick enough to hold its shape while still being fluid enough to spread easily over the steamed egg.

If it seems too thick, simply add a little more water and blend again until you reach the consistency you prefer.

Step 3 – Cook the minced chicken

Heat the oil in a frying pan over medium heat. Add the chopped garlic and sauté until fragrant, taking care not to let it brown too much.

Stir in the chopped Dong Choy and sauté for about 30 seconds until fragrant. 

Add the minced chicken and continue stir-frying until it is fully cooked.

Note: Dong Choy provides most of the seasoning for the chicken topping, so taste the chicken before adding any extra seasoning. If you choose to make the topping without Dong Choy, season the chicken with light soy sauce and a little ground white pepper before serving.

Step 4 – Assemble and serve

Spread the pumpkin puree evenly over the steamed egg, covering the entire surface. Spoon the minced chicken topping into the center.

Finish with chopped spring onions for a fresh contrast and a touch of color. Serve immediately while the steamed egg is still warm, with steamed rice on the side.

Steam gently

The most crucial step to get a shiny steamed egg with a mirror-like surface is gentle steaming. High heat can cause the custard to puff up, creating air pockets and an uneven texture.

Always cover the dish

Whether you use an inverted plate, aluminum foil, or cling wrap, keeping condensation away from the egg is essential for achieving a smooth custard.

Water droplets falling onto the surface can create small craters and affect the beautiful, smooth appearance.

Adjust the thickness of the pumpkin puree

Pumpkin puree made from pumpkin alone is too thick to spread easily over the custard. Therefore, adding water while blending is essential to create a puree that spreads easily over the custard. 

I prefer a consistency similar to a thick cream sauce, but you can make it slightly thinner if you prefer.

Prepare each component separately 

I love this recipe because each component is prepared separately before being assembled. This allows every layer to maintain its own texture and flavor.

The steamed egg remains delicate, the pumpkin puree keeps its natural sweetness, and the minced chicken adds a savory contrast that balances the whole dish.

  • Overbeating the eggs – Beating the eggs too vigorously incorporates excess air into the mixture, which can create tiny bubbles and affect the texture of the steamed custard. 
  • Steaming over high heat – A strong boil often produces an uneven, honeycomb-like texture. Gentle steaming allows the custard to cook slowly and remain delicate.
  • Leaving the dish uncovered – Condensation collecting on the lid will eventually drip onto the egg. These water droplets can leave small marks on the surface and affect the final appearance. 
  • Making the pumpkin puree too thick – Pumpkin blended without enough water becomes difficult to spread and may pull at the delicate steamed egg underneath.
  • Making the chicken topping too salty – Dong Choy is naturally salty, so taste the chicken before adding any extra seasoning. Taste the chicken topping after stir-frying before deciding whether any additional seasoning is needed.
  • Overcooking the egg – The steamed egg should be just set with a gentle wobble in the center. If it continues steaming for too long, the texture will become firmer and lose its silky smooth consistency.
  • Use minced pork instead – Minced pork is an excellent substitute for chicken and creates a tender, juicy topping, especially when the pork contains some fat. 
  • Add dried shrimp – A small amount of finely chopped dried shrimp, stir-fried with the garlic, adds a savory seafood flavor to the chicken topping.
  • Make it vegetarian – Omit the minced chicken and use only the pumpkin puree over the steamed egg for a lighter version. Although simpler, the combination still works well because the sweet pumpkin and silky egg remain the main elements of the dish. 
  • Serve individually – Steam the egg in small bowls instead of one large serving dish for a more attractive presentation when entertaining guests.

Steamed Egg Custard

  • 4 eggs (about 200g)
  • 300ml water
  • ½ teaspoon salt

Pumpkin Puree

  • 120g pumpkin flesh (peeled and seeded)
  • 60ml water

Minced Chicken Topping

  • 100g minced chicken
  • 1 tablespoon Dong Choy (冬菜), preserved Chinese cabbage
  • 4 cloves garlic, chopped
  • 2 tablespoons vegetable oil

Instructions

    Prepare the egg custard

  • Beat the eggs lightly in one direction until combined. Add water and salt, then stir gently.

Make the pumpkin puree
