How to Make Air Fryer Chicken Drumsticks Step by Step
1. Prepare the Chicken
- You may use any cut of chicken, but I use chicken drumsticks for this recipe.
- Using a sharp knife, make a few slits at the thickest part of each drumstick. These slits allow the marinade to penetrate deeper into the meat, ensuring better flavor throughout the chicken.
2. Prepare the Marinade
- Prepare the following ingredients: minced garlic, minced ginger, Malaysian curry powder, coriander powder, turmeric powder, cumin powder, plain yogurt, and salt.
Note: The marinade is similar to the original deep-fried version, except that curry leaves are omitted in this air fryer version. In the traditional deep-fried method, curry leaves are fried in oil to flavor the oil and also mixed into the marinade. Since this is an air fryer recipe, that step is skipped.
3. Marinate the Chicken
- Rub the marinade thoroughly onto each drumstick. Make sure the marinade is worked into the slits and evenly coats every piece.
- Cover and refrigerate for at least half a day. For best results, marinate overnight in the refrigerator.

Do not use only cornstarch for coating
Since air frying uses much less oil, coating the chicken with only cornstarch will result in a very pale color and a harder texture. That is why I use a 50:50 combination of cornstarch and all-purpose flour. This produces a crunchier texture and a beautiful golden color.
Use a Small Amount of Oil
Even though the chicken is air-fried, brushing a small amount of oil on the surface helps achieve a golden, crispy finish. I used about 1 teaspoon of oil per drumstick.

Every air fryer behaves differently. Use the cooking time as a guideline, but always check the color and test the crispness before finishing. I use 190°C (375°F) for 20 minutes to cook the chicken through, followed by 230°C (445°F) for another 5 minutes to achieve a crispy, golden-brown finish.
