This Chinese beef and mushrooms recipe is downright delicious.
It is quick and easy and requires only some simple ingredients.
If you follow this recipe closely, you’ll be able to get the result as good as the Chinese restaurants, if not better.
The tender strips of beef, coupled with the flavor from the mushrooms, are a perfect match.

1. Prepare the beef
- You can use any cut of beef, but flank steak and skirt steak are my choices for stir fry.
- Cut the flank steak across the grain into thin slices. It is easier to cut it into thin slices in a half-frozen state.
- Season the beef with salt, black pepper, and some oil.
- You may add half a teaspoon of baking soda to marinate the beef, which helps tenderize the beef. However, this is optional.
- Set it aside and let it marinate for 15 minutes.
2. Use a variety of mushrooms and vegetables
I use three mushrooms: shiitake mushrooms, king oyster mushrooms, and button mushrooms.
Besides the mushrooms, I also include snow peas to add some crunchiness.
It is also a good idea to add some extra veggies. For example, red and green bell peppers are cut into strips to add color and shapes.
Another ingredient that is suitable to add to the recipe is bok choy. Besides that, Gai Lan is also a good alternative.
Here are what you need to do:
- First, cut the king oyster mushrooms and button mushrooms into slices.
- Next, rehydrate the dry shiitake mushrooms, then cut them into slices.
- Remove the string of the snow peas. The string makes the snow peas tough and stiff. Grasp the end of the snow pea, and pull it along the pod to remove the string.
- Lastly, cut the red and green bell pepper into strips.
3. The stir-fry sauce.
The seasoning ingredients for the sauce are commonly available in the kitchen pantry. You do not need fancy seasoning ingredients to prepare a delicious beef stir fry.
These ingredients are Hoisin sauce, light soy sauce, and oyster sauce. You can add some dark soy sauce if you prefer a deeper color.
In a small bowl, prepare the stir-fry sauce by combining the light soy sauce, oyster sauce, dark soy sauce, and hoisin sauce.
4. The cooking process
I plan to stir-fry the beef separately, then combine it with the stir-fried veggies later. I can control the doneness of the beef better if I cook them separately.
- Add a tablespoon of oil to a pan. Pan-fry the beef slices on both sides over medium heat until golden brown. Remove and set aside.
- Heat two tablespoons of vegetable oil in a large wok.
- Saute the coarsely chopped garlic until aromatic.
- Add the mushrooms and stir-fry over medium heat until tender, which takes about 2 minutes.
- Include the snow peas and the bell pepper, and continue to stir-fry for another minute.
- Pour the stir-fry sauce into the wok to mix with the mushrooms and vegetables.
- Return the cooked beef to the stir-fry veggies and turn up the heat. Stir-fry the beef over medium-high heat for about a minute.
- Prepare the cornstarch slurry by combining one teaspoon of cornstarch with two tablespoons of water. Pour the cornstarch slurry into the wok to thicken the gravy.
- Finally, drizzle the Shaoxing wine and sesame oil on the beef. Have a few quick stirs and dish out.
- Sprinkle thinly sliced green onions (spring onions) on top and serve.
Note:
- The best kitchen utensil for preparing Chinese stir-fry is a cast iron wok. You can use a large frying pan or a large skillet to stir-fry. The result is pretty close to the wok.
- You can use dry sherry as the substitute for Shaoxing wine if unavailable.

- Thicken the gravy with cornstarch slurry.
- Drizzle the Shaoxing wine and sesame oil on the beef and mix well. Dish out and serve.

PK I made this beef and mushroom dish tonight. Stir fry sauce was amazing. I improvised a little as I made it spur of the moment. I used very rare sirloin tip leftover with red pepper shiatakes and sweet onions. Amazing dish. Couldn’t get a picture because the family couldn’t wait to eat it.

Hi. I printed off your beef and mushroom stir-fry recipe and noticed that your description stops at #3 where you add the mushrooms and stir-fry over medium heat. That's it. Nothing else about adding the rest of the vegetables, the sauce, or the slurry. I read your entire post and watched your video so I know what to do. Just thought I'd let you know that the recipe is incomplete. Thank you for this recipe. Can't wait to try it.
