Teriyaki steak recipe – with homemade teriyaki sauce

I’ve teriyaki steak for tonight’s dinner. It is not an ordinary salt and pepper steak. Instead, the steak is marinated and served with a homemade teriyaki sauce to create a fusion of Western and Eastern cuisine. This unique recipe combines the best of both Eastern and Western cuisines.

1. The homemade teriyaki sauce

To simplify things, I keep the Teriyaki sauce simple with three main ingredients: Japanese soy sauce, sake, and sugar.  You can use brown sugar for better caramelization and color. The basic teriyaki sauce involves mixing equal parts of each ingredient in a small bowl and then boiling it in a small pan. Once boiled, reduce the mixture until it forms a thick and sticky sauce.

There are some variations in making the sauce. For instance, some cooks like to add grated fruit like apple to enhance its flavor, while others prefer to add mirin. However, I will stick to the basic sauce since I am dining alone for tonight’s dinner.

The sauce is prepared by combining the sugar, sake, and soy sauce in a small saucepan. Then, heat it over low heat until the sugar is melted and part of the liquid has evaporated, forming a thick and glossy sauce.

This teriyaki sauce can be used for many other Japanese dishes. If you like the teriyaki flavor, it is worthwhile to make a larger batch. Keep the extra in an airtight container and store it in the refrigerator.

2. Marinate with teriyaki marinade

I use sirloin steak, but you can choose boneless ribeye steak, flank steak or any cut of beef. Unlike most other steak recipes, this teriyaki steak recipe involves marinating the beef. I marinate my sirloin steak using sake, salt, garlic, and ginger paste. To avoid the garlic and ginger from falling off the steak during grilling, I finely mince them and squeeze out the juice to use in the marinade. This technique differs from simply seasoning the surface of the steak with salt and pepper. Combine the teriyaki marinade with the steak to marinate for at least fifteen minutes.

3. Grill the steak

Heat some vegetable oil on the grill pan until it is hot enough, then place the marinated steak and let it grill over medium-high heat for about 2 minutes without moving it. This allows the grill line to form at the bottom. Then, turn the steak 90 degrees to create cross-section grill marks. Finally, I flip over the steak and grill the other side. To ensure it is not overcooked, I use a kitchen thermometer to pierce the thickest part of the steak. When the internal temperature reaches 125 degrees F(about 50 degrees C), I remove the steak from the hot grill.

Note: Pan-fry the steak with a large skillet or frying pan if you do not have a grill pan.

4. To serve the Japanese steak

Place the steak on a cutting board and rest at room temperature for approximately 10 minutes. Then, slice it into thin strips at an angle. Next, transfer the sliced steak to a serving plate and pour the prepared teriyaki sauce.

To add flavor, sprinkle toasted sesame seeds on top of the meat and garnish it with green onions before serving. Serve with some grilled vegetables as side dishes.

Ingredients

To marinate the beef

  • 350g steak
  • 7g ginger (to make ginger garlic juice)
  • 2 cloves garlic (to make ginger garlic juice)
  • 1 tbsp sake
  • 1/4 tsp salt
  • 1 tbsp vegetable oil

To make teriyaki sauce

  • 2 tbsp Japanese soy sauce
  • 2 tbsp sake
  • 2 tbsp sugar

Others

  • Green onion and toasted sesame seeds to garnish

Instructions

  2. Marinate the steak using sake, salt, vegetable oil, garlic, and ginger paste. To avoid the garlic and ginger from falling off the steak during grilling, mince them and squeeze out the juice to use in the marinade.  Mix the teriyaki marinade with the steak to marinate for at least fifteen minutes.
  3. Heat some vegetable oil on the grill pan until it is hot enough. Then, place the steak and let it grill over medium-high heat for about 2 minutes without moving it. Then, turn the steak 90 degrees to create cross-section grill marks. Finally, flip the steak over and grill the other side. Remove the steak from the hot grill when the internal temperature reaches 125 degrees F(about 50 degrees C).
  4. Place the steak on a cutting board and rest at room temperature for approximately 10 minutes. Then, slice it into thin strips at an angle. 
  5. Next, transfer the sliced steak to a serving plate and pour the prepared teriyaki sauce.
  6. Sprinkle toasted sesame seeds on top of the meat and garnish it with green onions.
